Looking for a yummy clean dessert recipe for the weekend? Made this and it was really moist:) (If you use the heavy whipping cream it's not true Paleo- more like Lacto- Paleo).
Remember, it may be made with clean ingredients but its still a treat;)
1/2 cup coconut flour
6 free run eggs
1/2 cup coconut oil, melted
1/2 cup pure maple syrup
1/2 tsp pure vanilla
1/4 tsp salt ( I used Himilayan)
1/4 tsp organic baking soda
3/4 cup frozen raspberries
Fresh berries and whipped heavy cream (optional)
1. Preheat oven to 350 F
2. In a large mixing bowl, combine coconut flour, eggs, coconut oil, maple syrup, vanilla, salt and baking soda.
3. Blend until smooth with hand mixer.
4. Once batter is combined fold in 2/3 cup raspberries.
5. Pour into a 9" spring form pan. For easy removal line the bottoms with parchment paper.
6. Bake for 30-35 minutes
7. Remove from oven and let cool.
8. To make raspberry coulis, purée remaining raspberries with 1 tbsp water in a blender/magic bullet until smooth.
9. Slice cake and top with fresh berries, whipped cream and coulis.
